Happy Thanksgiving!

Tomorrow is the day that Americans will sit down at the family table with their families, eat too much food, and enjoy each other’s company, until they don’t.

I am thankful for…

  • Mr. Incredible - he is my rock, he has been through so much with me, sickness and health - he is my everything - I can’t imagine my life without him (because I choose not to) - he completes me.

  • My Kids - they make every day an adventure…and life should be full of adventures….
  • My blogging Friends - y’all are awesome - I have meet some pretty amazing people over the past few years, and I am grateful to have you all in my life!
  • My Job - Even though it drives me crazy - I am thankful that I have a job, that it pays me enough to help provide for my family.

Our Thanksgiving plan was to have a pork loin, veggies, nothing big…. - as I am going out the driveway to go to the store, Mr. Incredible and I were talking on the phone and it was decided that we would have TURKEY tomorrow…with all the traditional Thanksgiving day items…

So two stores later, I buy the smallest fresh Turkey I can find (13.8 lbs.) - there is no way a frozen one would be thawed in time, a 5 lbs bag of potatoes, sweet potatoes, veggies, stuffing, homemade rolls, and pie. (Meritt - stop reading please!!) Please keep in mind -I am not MARTHA STEWART - heck I can’t even pass for Betty Crocker.

I will boil the potatoes and make them into mashed.
Sweet potatoes - I am cheating and using the ones from a can.
Veggies - (We are going for the green and white trees!)
Stuffing - from a box…
Homemade Rolls - I bought frozen dough - It’s rising as I type and I’ll bake them in the morning.
Pie - Aunt Sara is helping with this one…

Per Pan’s request we will have a “charlie brown” thanksgiving right after the parade and our big “meal” will be late afternoon.

    We’ll be having stuffing from a box, too. No matter how I try, I can’t come up with stuffing that tastes better.

    Sometimes these are the best Thanksgiving’s just simple and with your family. It will probably provide great memories for your kids!

    I’m using Trader Joe’s stuffing from a box but I added chopped onions, carrots, celery, breakfast sausage ans cornbread just to jazz it up. I didn’t bother with making desserts - so not my thing. Baking just stresses me out…
